During the evaluation process, the jury pays particular attention to sensory characteristics resulting from dealcoholization. These include changes in aroma and flavor intensity, the impact on structure and perceived acidity, and any potential textural differences arising from the applied technology.
Scoring continues to follow the international OIV regulations; however, due to the specific nature of this category, the evaluation criteria on the judging sheets are expanded to include assessment of technological compliance and stylistic integrity.
